My Grandma gave me a wedding gift that has already been so practical and wonderful for me. The book is called, "Down-Home Cooking for One or Two." Cooking for two has been a delightful experience. Everything seems "miniature" (especially the shopping list!)

Since this is Cuisine for CROWDS though, I will 5x the recipe before posting. :-)

Potato Pancakes

10 medium potatoes
5 eggs
10 tablespoons flour
2 tsp. salt
1 tsp. garlic salt
Vegetable oil

Peel the potatoes; shred and rinse in cold water. Drain thoroughly; place in a large bowl. Add egg, flour, salt and garlic salt; mix well. In a skillet over medium heat, heat 1/4 inch oil. Pour batter by 1/4 cupfuls into hot oil. Fry for 5-6 minutes on each side or until potatoes are tender and pancakes are golden brown. Drain on paper towels. Serve hot.

*I also added some shredded cheddar cheese to the recipe (because my husband loves cheese). It was very yummy. Play with it and personalize it to how your family prefers it.

**Also, I used a non-stick skillet, so that may make a difference with how they turn out. It worked beautifully in the non-stick pan.

I'd love to have your 'miniature' shopping list :)

When my mom got married, she was used to cooking for a large family, so she just continued and thought she would put the leftovers away for her own lunches, since her new husband would be at work.

However, my father was taught that in order to make the cook feel like she was preparing good food, you should eat everything on the table.

Seems funny, but the problem was, mom just kept making a little more, and a little more each time. I guess he finally apologized that he just couldn't eat it all, and that's when they both realized what had been happening.

Congratulations on you marriage! We've really enjoyed following your family's blogs.

Ooo, yummy recipe! I think that it would be good with cheese too... and I think that I might add a few chopped onions! :) YUM! This is getting better! :)

Will enjoy trying this recipe, Kaity! The only problem is that I will have to shrink it back down!!! I'm still enjoying cooking on a smaller scale, too--although with all the little boys God is giving us, that is going to end soon! :)
