Microwave Rice Pilaf

1/2 cup each chopped onion and celery (you can use green peppers, too)
6 tablespoons butter or margarine
3 cups hot water
2 jars (4 1/2 ounces) mushrooms
2 cups uncooked instant rice
3 tablespoons bouillon granules

In 2 quart microwave-safe bowl, combine onion, celery and butter. Microwave, uncovered, on high for 3-5 minutes or until vegetables are tender. Stir in remaining ingredients. Cook on high for 12-14 more minutes or until rice is tender. Yields: 8-10 servings

We like to boil frozen peas while the rice is cooking, then when the rice is finished, we drain and add the peas. It adds color, and it also tastes good!
