Chicken Salad

This is a wonderful recipe we enjoy for Sunday lunch with tortilla shells! We usually don't add the celery or eggs.

4 c. chicken, cooked and minced
3/4 c. mayonnaise
1/4 c. sour cream
1/2 c. sweet pickle relish
2 tsp. lemon juice
1/2 tsp. sugar
3/4 tsp. seasoned salt
1/8 tsp. fine pepper
1/8 tsp. cayenne pepper

Combine first three ingredients in a large bowl. Combine dressing ingredients in a separate bowl. Add dressing to chicken mixture and stir. Chill 1-2 hours before serving.

Yield: 8 servings

Or for a bigger crowd...

8 1/3 lbs. chicken, chopped and minced
1 bunch celery, minced
2 dozen hard-boiled eggs, 1/4 in. diced
2 1/3 lbs. mayonnaise
3/4 lb. sour cream
2 c. sweet pickle relish
1/4 c. lemon juice
1 Tbsp. sugar
1 1/2 Tbsp. seasoned salt
1 tsp. fine pepper
3/4 tsp. cayenne pepper

Combine first three ingredients in large bowl (12 qt.). Combine dressing ingredients in a separate bowl. Add dressing to chicken mixture. Chill 1-2 hours before serving.

Yield: 30-35 main dish servings or 50 side dish servings.
