Rhubarb Bread

Rhubarb Bread
Ingredients:
3 cups brown sugar
2 eggs
1 1/3 cups oil
2 tsp. vanilla
2 cups buttermilk
5 cups flour
2 tsp. salt
2 tsp. baking soda
4 cups diced rhubarb
1 cup pecans (optional)


Directions:


Mix together brown sugar, egg, oil, buttermilk and vanilla. Add dry ingredients. Blend well. Fold in rhubarb & nuts. Pour into greased and floured bread pans. Sprinkle with cinnamon and sugar.


Bake at 350 degrees for 60 minutes. Enjoy!

We grow rhubarb in our garden and this is one of things that we like to do with it!
