Funnel Cakes

6 cups vegetable oil or shortening, for frying
1 ½ cups milk
2 large eggs
2 cups unbleached all-purpose flour
1 teaspoon baking powder
2 tablespoons sugar
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners’ sugar (powdered sugar)

Heat oil to 375 degrees in a deep, heavy pan with at least 3-inch deep sides. (You’ll want to start this now as it takes awhile to heat up.)

In a large bowl, beat together the milk and eggs. Combine the flour, baking powder, sugar, cinnamon and salt. Stir into the egg mixture until smooth. While covering the funnel hole with one hand, pour in ¾ to 1 cup of batter. Start from the center of the frying oil and, in a swirling motion, pour batter in concentric and overlapping circles to make a 6- or 7-inch round.

Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners sugar and serve warm.

Yields: About 8.

We don’t usually serve each person their individual one but just let everybody “go for it” when it is done.

Be very careful around little children with hot oil.

Abbie,

We tried funnel cakes today! Mummm. They were really good! They taste just like when you get them at the fair. My grandpa was here when I made them and he ate almost a whole one by himself! :-) He also took some home to grandma, so we'll see what she says about them.

I don't mean to be critical, but do you possibly mean 1 teaspoon of baking POWDER, not baking flour? :-)
