Ingredients:
1 butter (we use Crisco)
½ c. vegetable oil
1 c. peanut butter
1 ½ c. sugar
1 ½ c. brown sugar
4 eggs
2 tsp. vanilla
1 tsp. salt
2 c. flour
4 c. rolled oats (not instant)
Goodies:
3 c. chocolate chips, or M&Ms, or trail mix, or a combo
Use a large mixer for this recipe!
Directions:
1. Beat the butter, oil, peanut butter, sugars, eggs and vanilla until smooth.
2. Stop the mixer and scrape down the bowl and beaters. Add everything else and mix again.
3. Scoop medium size lumps onto ungreased baking sheets. (we do about 12 per pan.)
4. Bake at 375 degrees for 12-14 minutes. Cool for a minute on the baking sheet and then on a rack.
Yields: 7-8 dozen
For softer and chewier cookies, try 10-12 minutes. Our family usually just puts in chocolate chips and every once in a while we’ll do the M&Ms. We’ve never tried trail mix before.
We also freeze about ½ and save them for when we “need” them. :)

These are WONDERFUL!!! Mom loves making them (and so do I :)! They are also good frozen. Just make sure you soften them a bit. :)
