Fudgy Brownies

Fudgy Brownies with Cream Cheese Frosting

Fudgy Brownies:
1 c. butter
6 oz. unsweetened chocolate, coarsely chopped
2 c. sugar
4 eggs
2 tsp. vanilla
1 1/3 c. all-purpose flour
1/2 tsp. baking soda
1 c. chopped almonds or pecans (opt)
1 recipe chocolate-cream cheese frosting

1. Preheat oven to 350°F. In a medium saucepan, melt butter and unsweetened chocolate over low heat, stirring constantly. Remove from heat; cool.

2. Grease a 13x9-inch baking pan; set aside. Stir sugar into cooled chocolate mixture in pan. Add the eggs, one at a time, beating with a wooden spoon till just combined. Stir in the vanilla.

3. In a small mixing bowl, stir together flour and baking soda. Add flour mixture to chocolate mixture; stir just until combined. If desired, stir in nuts. Spread the batter into the prepared pan.

4. Bake for 25 minutes. Cool in pan on a wire rack. If desired, frost with chocolate-cream cheese frosting. Cut into bars.

Chocolate Cream Cheese Frosting:In a saucepan, melt 2 cups semisweet chocolate pieces over low heat, stirring constantly. Remove from heat; cool slightly. In a small bowl, stir together 1 1/2 8-oz. packages (12 oz.) softened cream cheese and 1 c. powdered sugar. Stir in melted chocolate until smooth.

Peanut Rocky Road

This was a huge hit at our house!

2 lbs. almond bark
3 c. mini marshmallows
3 c. dry roasted peanuts
1 1/2 c. peanut butter

Melt almond bark on large cookie sheet in a 200 degree oven for 20 minutes. Combine marshmallows, peanuts and peanut butter. Pour melted almond bark over the mixture and mix well. Spread the rocky road evenly onto a cookie sheet (the same one the bark was melted on is fine.) Refrigerate for at least 1 1/2 hours. Cut and store in refrigerator.

Peanut Butter Bars

~This is a super easy no bake recipe! Our family really enjoys these bars!~

1/3 box graham crackers, crushed (1/3 a box is one cellophane wrapped package)
1/2 tsp. cinnamon
1 c. butter (2 sticks)
2 tsp. vanilla extract
1 1/2 c. peanut butter, creamy or chunky (we use creamy)
3 1/2 c. powdered sugar
1 12 oz. bag chocolate chips (2 cups)

In a blender, crush graham crackers into fine crumbs. Mix in the cinnamon and set aside. Melt the butter in a large saucepan. Remove from heat and add the vanilla and peanut butter and mix well. Add the powdered sugar and graham cracker mixture. Stir until well combined; it will be a stiff dough. Pat the mixture into an ungreased 9x13 pan. Melt the chocolate chips on very low heat in a really heavy saucepan, or spread evenly in a glass pie plate and microwave 30 seconds at a time, stirring after each 30 seconds, until melted.* Spread the melted chocolate over the peanut butter layer. Refrigerate for 1 hour before cutting. Cut and enjoy!

*I melted the chocolate the microwave method.

Fudge Delux

These are very good! Enjoy!

*1 3/4 cups granulated sugar
*2/3 cup evaporated milk
*2 TBSP butter
*1 dash salt
*1 1/2 cups semi-sweet chocolate chips
*1/4 lb (about 20) marshmallows, quartered
*1/2 cup chopped walnuts
*1 TSP vanilla

1. In a heavy sauce 2-quart sauce pan, combine first 4 ingredients.
2. Bring to a boil over medium heat; boil 5 minutes, stirring constantly.
3. Remove from heat; immediately add chocolate chips and marshmallows.
4. Stir until chocolate and marshmallows are melted.
5. Stir in nuts and vanilla.
6. Spread into a buttered 9" by 9" by 2" pan. Cool;
Cut into squares.

Frosted Pumpkin Bars

2 cups all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cup sugar
1 cup salad oil
4 eggs, beaten
1 cup cooked pumpkin
1 cup chopped pecans

Combine flour, spices, and salt. In a separate bowl mix sugar, oil, eggs, and pumpkin. Stir flour mixture into pumpkin mixture. Beat well. Add pecans. Pour into well- greased 9by13" cake pan. Bake in 325* oven 20 minutes.

Frosting: 1 8 oz. package cream cheese.
1/2 cup butter or margarine
1 tsp. milk
1 tsp. vanilla
1 1 lb. box powdered sugar
Mix all together.

I know, I 'm already getting you ready for thanksgiving! lol:) Just kidding. Hope you like the recipe... you actually might want to save this recipe because it is SO good at thanksgiving time! Enjoy!

No-Bake Chocolate Peanut Butter Bars

Today I have a very yummy recipe for you! This is a recipe I made when I went over to a girlfriend's house! It's fun to make with friends too! :) (By the way, this is a very "girl" treat. Chocolate... Peanut butter! YUM!) Well my brothers really liked it too... Anyway here it is!...

No-Bake Chocolate Peanut Butter Bars
2 cups peanut butter, divided
3/4 cup (1 1/2 sticks) butter, softened
2 cups powdered sugar, divided
3 cups graham cracker crumbs
2 cups (12 oz. package) Semi-Sweet Chocolate Mini Morsels, divided

GREASE 13x9-inch baking pan

BEAT 1 1/4 cups peanut butter and butter in large mixing bowl until creamy. Gradually beat in 1 cup powdered sugar. With hands or wooden spoon, work in remaining powdered sugar, graham cracker crumbs and 1/2 cup morsels. Press evenly into prepared pan. Smooth top with spatula.

MELT remaining peanut butter and remaining morsels in medium, heavy-duty saucepan over lowest possible heat, stirring constantly, until smooth, or melt in microwave. Spread over graham cracker crust in pan. Refrigerate for at least 1 hour or until chocolate is firm; cut into bars. Store in refrigerator.

We (my friend and I) used chocolate cookie crumbs instead of graham cracker crumbs. It was very good that way too! Just make sure that you take the frosting out of the middle first. :)
You can also use crunchy peanut butter.
