Grilled Chicken Cordon Bleu
Ingredients:
12 boneless skinless chicken breast halves (4 ounces each)
12 slices Swiss cheese
12 thin slices deli ham
6 tablespoons olive oil
1 1/2 C. seasoned bread crumbs
Directions:
Flatten the chicken to 1/4-in. thickness. Place a slice of cheese and ham on each to within 1/4 in. of edges. Roll up; secure with toothpicks. Brush with oil and roll in bread crumbs.
Grill, covered, over medium-hot heat for 7-9 minutes on each side or until chicken is no longer pink. Remove toothpicks. Yield: 12 servings.
Note: This recipe can easily be doubled or halved.

Oh Lindsay, I can't wait to try it! Did you end up adding broccoli to it? I think I'm going to try it with broccoli.
This sounds great! My mother-in-law tried a recipe like this awhile back and really liked it.
Karisse, I did not put broccoli in it, but I think it would work just fine if it was chopped small enough. Let me know how it turns out!
