Squash Casserole

She comments: "Here is a recipe that my family and I make every summer. Most of us don't like squash at all, but in this recipe, we find it bearable. ;-)"



Ingredients:
4 cups sliced summer squash
4 cups sliced zucchini
2 large onions, sliced and separated into rings
2 cups mayonnaise
4-5 T. butter
4 eggs
8 oz. grated colby cheese (or more!)

Instructions:
Layer squash in bottom of 9x13 pan. Cover with onion rings. Spread with mayonnaise and dot with butter. Whisk eggs and pour over the top of everything in the pan. Cover with cheese. Cover pan with tin foil and bake at 350 degrees for 35-45 minutes.

Since we always seem to have an abundance of squash and zucchini every year, we'll have to try this!
