Flint Granola

9 c. rolled oats
1 c. coconut
1/2 c. chopped walnuts
1 Tbsp. cinnamon
1 c. + 2 Tbsp. honey
1 c. water
1/4 c. oil
1 Tbsp. vanilla extract
1 tsp. salt

Combine oats, coconut, walnuts, and cinnamon in large bowl. Set aside. Combine honey, water, oil, vanilla extract and salt in a sauce pan. Place over high heat. Cook until mixture starts to boil. Remove from heat. Add to dry ingredients. Mix well. Spread onto 2 cookie sheets. Bake at 350* until browned, 20 minutes. Take out and toss. Break apart large chunks. Bake an additional 20 minutes or until well browned.

Yield: 15 servings
