Sweet and Sour Chicken
When we were in Suriname the girls taught me to make something called "Baka Bana". When I tried making it here it did not turn out right. But when my mom tasted it she said "How did you make that? It would be perfect batter for making Sweet and Sour chicken!" So here it is! Enjoy!

1 c. Flour
1Tbs. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp vinegar
Enough water to make consistency of pancake batter
1 large chicken breast, cut into 1 inch pieces
Oil for frying

Mix all ingredients. Dip chicken one piece at a time into the batter. Slowly drop into hot oil (350 degrees). Fry in 3 inches of oil for 2-4 minutes or until the outside is a deep golden brown. Serve warm with Sweet and Sour sauce.

Sauce:
1 teaspoon cornstarch
1/3 cup distilled white vinegar
2 teaspoons vegetable oil
2/3 cup unsweetened pineapple juice
2 tablespoons ketchup
3 tablespoons brown sugar
salt to taste

In a small saucepan over a medium-low heat, whisk together vinegar and cornstarch. Add oil, pineapple juice, ketchup, brown sugar, and salt; whisking constantly until the mixture is heated through.


Note: This recipe is more sour than sweet, so if you want more sweet add more pineapple juice.
