Rhubarb Cake

Cream: 1 1/2 cups sugar
1 stick butter or margarine

Add: 1 egg
1 cup buttermilk or sour milk
1 teaspoon baking soda
1 teaspoon vanilla
2 cups flour

Mix well. Then add 2 cups rhubarb.

Grease and flour 9x13 pan, then pour batter in pan. Bake for 35-45 minutes at 350 degrees. After cake has set up in oven, sprinkle with 1/2 cup sugar and 1 teaspoon cinnamon.

None of our family really likes rhubarb, but we love this cake! It is delicious! This recipe will come in handy for the rhubarb season... mmmmm.
