Salisbury Steak

4 pounds ground beef
4 eggs, lightly beaten
1/3 cup chopped onion
1 cup (1 package) saltine crumbs
8 tablespoons milk
1 teaspoon salt
1/2 teaspoon pepper
3 cans beef gravy
1 (12 oz.) can cream of mushroom soup
1 (10.75 oz.) can mushrooms (optional)

Mix beef, eggs, onion, saltine crumbs, milk, salt, and pepper. Shape into patties. Place small amount of oil in large skillets and brown patties. Place in large baking dish (10x15) and cover with mixture of gravy and soup. (If adding mushrooms, mix in with the gravy and soup)

Cover with foil and bake at 325* until heated through or until dad comes home to eat. :) About 30 to 45 minutes. Serve with mashed potatoes or noodles.
