Cream of Broccoli Soup

We had been looking for a good cream of broccoli soup recipe for a long time. We finally found one that was pretty good, and made a few changes to make it delicious! :-) Hope you enjoy it!

Ingredients:
4 cups water
4 teaspoons chicken bouillon
6 cups chopped, fresh broccoli (we used the Pampered Chef Food Chopper to chop ours, so if you have that it works well for the job)
5 tablespoons finely chopped onion
4 cans cream of chicken soup
4 cups evaporated milk
3 cups sour cream
4 cups cheddar cheese
2 teaspoons dried parsley flakes
1/2 teaspoon pepper

Directions:
Combine water and bouillon granules in large pot. Add broccoli and onion. Bring to a boil; reduce heat. Simmer for 10 minutes or until broccoli is tender.
Add cream of chicken soup, milk, sour cream, cheddar cheese, parsley, and pepper to broccoli mixture. Cook and stir for about 5 minutes until heated through.

Serves 14-16
Prep. and cook time: 30 minutes

Oh---

This sounds REALLY good! I REALLY wish I could try and make it! But if we have milk we get stomache cramps and colds and other things. That is why I asked for some recipes without milk.

Oh, that's right...I might look through some of Autumn's recipes; she was doing a dairy-free diet for a while. I might be able to find something out of her stuff. That will be my project for the New Year. :)
