I thought this would be fitting for this week, and also 'fun'. The finished, layered look is cute, too. Anyway, here's the recipe. Enjoy and have a great 4th of July weekend!
2 packages (8 oz. each) cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
2 cups heavy whipping cream, whipped
2 quarts strawberries, sliced, divided
2 quarts blueberries, divided
In large mixing bowl, beat cream cheese, sugar and extracts until fluffy. Fold in the whipped cream. Place a third of the mixture in a 4 quart bowl. Reserve 20 strawberry slices and 1/2 cup of blueberries for garnish. Layer half of the remaining strawberries and blueberries over cream mixture. Top with another third of the cream mixture and the remaining berries. Spread remaining cream mixture on top. Use reserved strawberries and blueberries to make an American flag on top.
